Bruschetta

Bruschetta
13 March 2010

One of the things that I made this week for my son with the Baguette was Bruschetta.  One of the son’s favorites and it was one way to get him to eat his vegetables.

As the ingredients indicated, I had some left over of feta cheese,  I had to use it up before it turns bad. Cut those ingredients into small pieces,  throw them into a bowl,  mix them up with olive oil and dried parsley leaves.  I didn’t add any salt because the feta cheese was already salty.

Cut the baguette to the size relatively thin,  and place the ingredients.

The way to eat this is take it with our fingers and gobble up with 1 mouthful if you can,  if not, be prepared to have them dropped all over the place.

Ingredients:

Tomato

Cucumber

Pitted Black Olives

Feta Cheese

Olive Oil

Dried Pasley leaves
